Sidamo is a province in Ethiopia that is known for producing high-quality washed coffees with fragrant jasmine notes and citrusy flavours. The local smallholders grow heirloom varietals such as Kumie, Diga, and Wilsho. The caffeine removal process involves cleaning and hydrating the beans with pure water and using an internally developed Green Coffee Extract (GCE) to remove caffeine. The process takes around 10 hours and results in coffee that is 99.9% caffeine-free.
